Cashew and Apple Bread Pudding
Ingredients:
● 3 cups peeled, cored and diced apples.
● 1 cup roughly chopped store-bought honey-roasted cashew nuts
● 8 thick slices of raisin bread or any mild-flavored sweet bread
● Custard
● 1 cup fresh milk
● 1 cup table cream
● 1 tsp. ground cinnamon
● ¼ tsp. ground nutmeg
● Coconut oil, for greasing
● ¾ cup packed brown sugar
● ¼ cup bourbon or brandy, (substitute cola or soda)
● 1 small piece vanilla pod, halved lengthwise
● ¼ cup butter
● 3 medium eggs, whisked until frothy
Directions:
Lightly grease the insides of Yedi Pressure Cooker with coconut oil. Set aside.
Combine base ingredients in a bowl. Press this into the bottom of the greased Yedi Pressure Cooker.
Except for butter and vanilla pod, combine custard ingredients. Pour over base. Drizzle butter and add vanilla pod on top.
Press: SLOW COOKER and LOW. Set the timer to 4 hours. Secure lid
After the cooking cycle, discard vanilla pod.
Spoon small portions into dishes. Top off with a scoop of vanilla ice cream. Serve immediately.
