VEGAN BUFFALO CAULIFLOWER NACHOS
Ingredients:
2 cups cauliflower, cut into small florets
2 tbsp. olive oil
1⁄2 cup buffalo sauce
1⁄4 pinto or black beans
1⁄4 cup corn
3 cups tortilla chips
2 tbsp. chopped red onion
1⁄4-1⁄2 cup vegan nacho cheese
Cilantro, for garnish
Scallion, for garnish
Pickled red onion, for garnish
Radish, for garnish (optional)
Guacamole, for serving (optional)
Directions:
In a bowl add the cauliflower and coat in the olive oil.
Add to the basket of the air fryer and cook at 400°F for 10-12 minutes, shaking halfway through, or until deeply browned and crispy.
Remove from the basket into a large bowl and coat in buffalo sauce.
On a board or plate add a layer of your tortillas, then buffalo cauliflower, beans, corn, and onion.
Pour nacho cheese over the top and add your garnishes.
