ROASTED CHICKPEAS
Ingredients:
1 can chickpeas (drained & rinsed - no sugar added)
2 tsp. olive oil
1 tsp. ground cumin
1 tsp. ground coriander
1 tsp. garlic powder
1/8 tsp. ground ginger
Directions:
Put the rinsed beans into a medium mixing bowl and add all the rest of the ingredients.
Stir well to coat the beans in the oil and spices.
Pour the beans into the food basket of your air fryer.
Adjust the air fryer to a temperature of 370oF.
Cook for 12 minutes.
Pull out the basket and stir the beans. Put the basket back in and set again at 370oF. and cook for another 8 minutes.
Repeat the stirring process one more time, set for 370oF and cook for 1 minute longer.
If your beans are large they may need a little longer to get a good crunch. At this point, cook and stir in 1 minute intervals until they are cooked to your liking.
The main idea is to stir them every few minutes throughout the process. They should have a nice little crunch to them when they have cooled.
Packtheminsnackbagsandtakethemwithyouorstoretheminthe fridge until you are ready to eat them. Store in the fridge for up to one week. But be aware that you may have to roast them again for a minute or two to get them crunchy again if they've been in the fridge awhile.
