Spicy Pork Stew
Ingredients:
1 cup shallots, peeled, minced
1 cup tomato sauce
½ Tbsp. dark soy sauce
½ cup frozen peas, thawed, drained
½ cup raisins
¼ Tbsp. black pepper
3 Tbsp. coconut oil
1 Tbsp. garlic, minced
1 Tbsp. tomato paste
1 cup carrots, diced
½ cup tomatoes, deseeded, diced
½ cup sweet potatoes, diced
1 Tbsp. sea salt, add more later if needed
½ Tbsp. brown sugar
2 cups Homemade Buttery Mushroom Broth, Unsalted
½ cup potatoes, diced
1 pound deboned pork belly, diced
Directions:
Press: SAUTÉ and HIGH.
Pour coconut oil, garlic and onion into a Yedi Pressure Cooker. Cook until onions are limp.
Pour remaining ingredients into the Yedi Pressure Cooker.
Press: SLOW COOKER and LOW. Set the timer to 8 hours. Secure lid.
After the cooking cycle, taste the stew. Adjust seasoning if needed.
Pour stew into bowls. Cool slightly before serving.
