Spicy Pork Stew

 Ingredients:

  • 1 cup shallots, peeled, minced

  • 1 cup tomato sauce

  • ½ Tbsp. dark soy sauce

  • ½ cup frozen peas, thawed, drained

  • ½ cup raisins

  • ¼ Tbsp. black pepper

  • 3 Tbsp. coconut oil

  • 1 Tbsp. garlic, minced

  • 1 Tbsp. tomato paste

  • 1 cup carrots, diced

  • ½ cup tomatoes, deseeded, diced

  • ½ cup sweet potatoes, diced

  • 1 Tbsp. sea salt, add more later if needed

  • ½ Tbsp. brown sugar

  • 2 cups Homemade Buttery Mushroom Broth, Unsalted

  • ½ cup potatoes, diced

  • 1 pound deboned pork belly, diced

Directions:

  1. Press: SAUTÉ and HIGH.

  2. Pour coconut oil, garlic and onion into a Yedi Pressure Cooker. Cook until onions are limp.

  3. Pour remaining ingredients into the Yedi Pressure Cooker.

  4. Press: SLOW COOKER and LOW. Set the timer to 8 hours. Secure lid.

  5. After the cooking cycle, taste the stew. Adjust seasoning if needed.

  6. Pour stew into bowls. Cool slightly before serving.
