Quinoa Pudding

Ingredients:

●      3 cups coconut milk

●      ¼ cup brown sugar

●      ½ cup raisin

●      2 cups sweet marsala wine

●      1 small dried cinnamon stick

●      Coconut butter for greasing

●      1 small vanilla pod, halved lengthwise

●      1 cup brown or red quinoa, rinsed, drained

●      1 cup whipped cream

●      ¼ tsp. nutmeg powder

●      Strawberries

Directions:

1.    Using a pastry brush, lightly grease the insides of the Yedi Pressure Cooker with coconut butter.

2.    Except for garnishes, pour remaining ingredients into the Yedi Pressure Cooker.

3.    Press: SLOW COOKER and LOW. Set the timer to 6 hours. Secure lid.

4.    After the cooking cycle, discard the cinnamon stick and vanilla pod.

5.    Scoop a small amount of pudding into bowls. Add a small dollop of whipped cream on top, with a light dusting of nutmeg powder and sliced strawberries.
