Honey Turkey
Ingredients:
¼ cup honey
1 piece fresh jalapeno pepper, whole
4 pounds turkey drumsticks, about 6 small pieces, rinsed, drained
2 Tbsp. garlic, minced
¼ Tbsp. dark soy sauce
¼ cup red bell pepper, cored, deseeded, minced
½ cup raisins
½ cup dry sherry
½ cup onion, peeled, minced
½ cup water
¼ cup light soy sauce
Directions:
Place all the ingredients (except for the honey) into the Yedi Pressure Cooker.
Press: SLOW COOKER and HIGH. Set the timer to 8 hours. Secure lid.
After the cooking cycle, carefully extract the turkey drumsticks one by one. Place these directly on serving plates. Meat should be fall-off-the-bone tender.
Press: SAUTÉ and HIGH. Cook until sauce thickens so that it lightly coats the back of a spoon.
Turn off machine. Stir in honey. Discard jalapeno pepper. Taste. Adjust seasoning if needed.
Pour a small amount of sauce on each turkey drumstick. Serve with Java Rice if using.
