Banana Quinoa
Ingredients:
● 1 small piece dried cinnamon stick, whole
● 1 small piece vanilla pod, sliced lengthwise
● 1 cup coconut milk
● 3 cups water
● 1 cup uncooked quinoa, rinsed, drained
● 1 large ripe banana, sliced into half-inch disks, for garnish
● ½ cup overripe bananas, mashed well
Directions:
Except for garnish and milk, pour ingredients into the Yedi Pressure Cooker.
Press: SLOW COOKER and LOW. Set the timer to 8 hours. Secure lid.
After the cooking cycle, stir in coconut milk. Discard cinnamon stick and vanilla pod. Taste. Adjust seasoning if needed.
Scoop quinoa into bowls. Garnish with sliced bananas.
