Mozzarella Quesadillas

INGREDIENTS

·   8 thin slices of hard salami

·   12 slices of pepperoni

·   1 cup of meatless spaghetti sauce

·   2 teaspoons of butter

·   4 flour tortillas (10 inches)

·   1/4 cup of shredded Parmesan cheese

·   1 cup of shredded part-skim mozzarella cheese

·   1/2 a teaspoon of dried oregano

DIRECTIONS

1. Preheat both plates of your Yedi Grill to 375F and set the cooking time to 6 minutes.

2. In a small saucepan, cook spaghetti sauce over medium-low heat for 3-4 minutes or until heated through.

3. Meanwhile, spread butter over one side of each tortilla.

4. Sprinkle unbuttered sides of two tortillas with mozzarella cheese; top with salami and pepperoni.

5. Sprinkle with Parmesan cheese and oregano. Top with remaining tortillas, buttered side up.

6. Add to the grill, close the top plate and cook for 2-3 minutes or until cheese is melted.

7. Cut into wedges; serve with warmed spaghetti sauce, pico de gallo and sour cream.
